Pre-summer dessert - Coconut Chia Pudding with Homemade Jam.
Let's start with nutrition facts here. Chia seeds are one of the most nutritious foods on the planet. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. Chia seeds are usually grown organically, are non-GMO and naturally free of gluten.
COCONUT... Me and my fiancé are huge fans of coconut. Fresh coconut, coconut water, coconut milk, coconut chips, coconut butter, coconut oil... Despite the lovely tropical smell of coconut and all health benefits of coconut products, coconut milk is an excellent replacement of regular milk.
This is a very simple Mason Jar recipe, basically, you just put all the ingredients in a 32-oz Mason Jar, then, shake shake shake... That's it! I love to use Mason Jars to display my desserts - not just for pudding, but cake as well. It is 100% messy-free presentation.
- 1 1/4 cup coconut milk
- 1 tbsp maple syrup/honey
- 3 tbsp cocoa powder
- 1/4 cup chia seeds
- pinch sea salt
- Combine all ingredients in a large mason jar. Shake it well. Enjoy it!

- More Cocoa powder
- Homemade Jam (I will post the recipe later)
